A: Mushrooms are grown on farms all over Canada, 24/7/365. Over 50% of mushroom production is in Ontario, 35% in British Columbia, 10% on the Prairies and 5% in Quebec and the Maritimes. There are over 113.4 million kilograms (250 million pounds) of mushrooms grown in Canada annually.

Q: Are mushrooms grown on manure?

A: Not really. Mushrooms are grown on a substrate that is made up of several ingredients including: wheat straw, hay, poultry litter, stable bedding, gypsum and high protein supplements such as soybean meal and feather meal. This substrate is then pasteurized at high temperatures, 160°F/71°C, to destroy any unwanted micro-organisms and bacteria. In the end, a nutritionally-balanced growing substance is created. Simply stated, mushrooms grow in "clean dirt".

A: The most popular mushroom in Canada is the White Button (Agaricus), followed by Crimini and Portabella. Specialty mushrooms, such as Shiitake, Oyster, King Oyster, Maitake, and Enoki are also grown in Canada and are gaining in popularity.

A: Absolutely. Mushrooms are low in fat, sodium, carbohydrates, and have zero cholesterol. They are also a good source of riboflavin, niacin, copper, pantothenic acid and selenium, and are the only vegetable that contains vitamin D. Mushrooms also contain significant levels of l-ergothioneine, an antioxidant which is present in both cooked and raw mushrooms. Furthermore, mushrooms are grown naturally without additives.
