White tea is the rarest form of tea and originates from the same plant as black, oolong and green tea. Hand-picked only in early spring from the tea buds before the tea leaf blossoms, white tea is named for the silver fuzz appearing on the buds which turn white when dried. Tea leaves destined to be white tea undergo little processing and no fermentation; they are steamed to maintain the naturalness of the tea leaf.
