Chicken Enchiladas
Ingredients:
•2 tablespoons butter
•1/2 cup sour cream
•1 (10 3/4 ounce) can cream of chicken soup
•1 teaspoon chili powder
•1/2 cup chopped onion
•1 (4 ounce) can green chilies, chopped
•2 cups diced cooked chicken
•1 cup shredded cheddar cheese
•8 flour tortillas
oPre heat oven to 375F. Stir and mix soup and sour cream in a small bowl.
oHeat butter over medium heat; plus sauté the onion and chili powder until it becomes tender.
oStir in green chilies, chicken and 3 tbs. soup mixture.
oSpread the mixture along the tortilla’s center.
oRoll and put this in a 12x8 baking dish; and then spread the soup mixture.
oBake the enchiladas for 15 minutes.
oSprinkle it with cheese.
oBake again for 5 minutes.

Creamy Burrito Casserole
Ingredients
•1 (16 ounce) can refried beans
•1 (10 3/4 ounce) can cream of mushroom soup
•1 (1 1/4 ounce) package taco seasoning
•1 lb ground beef or ground turkey
•6 large flour tortillas
•2 3 cups shredded taco cheese or cheddar cheese
•1/2 medium yellow onion, chopped
•jarred hot sauce, if desired to spice it up
•4 ounces sour cream
oSauté ground meat and onions then drain it.
oStir in re fried beans and taco seasoning.
oMix the sour cream and soup in a bowl.
oIn a casserole dish, spread ½ sour cream mixture by the bottom portion.
oSpread the tear tortillas and add a layer of cheese.
oPut hot sauce on top and repeat the steps so as to form layers.
oSprinkle cheese over and bake at 350 Fahrenheit for about 20 to 30 minutes.

Taco Bell Quesadillas
Ingredients
For the Sauce:
•2 teaspoons minced jalapenos, slices
•1/4 cup mayonnaise
•3/4 teaspoon sugar
•2 teaspoons jalapeno juice, from minced jalapeos
•1/2 teaspoon cumin
•1/8 teaspoon cayenne pepper
•1/2 teaspoon paprika
•1 dash salt
•1/8 teaspoon garlic powder
For Quesadillas
•4 chicken tenderloins
•4 flour tortillas
•1 cup shredded cheddar cheese
•2 slices process American cheese
•1 cup shredded Monterey jack cheese
oCombine all the sauce ingredients and stir.
oIn vegetable oil, grill the chicken into thin slices.
oPre heat skillet in medium heat.
oPlace the tortillas while sprinkling ¼ cup shredded cheese. Put ½ cheese slices on the side of the tortilla.
oArrange chicken slice (¼ cup) on the tortilla and cover it with cheese in halves.
oSpread about one tbsp. sauce on the other side.
oFold and press it using a spatula.
oCook until the cheese melts.
oSlice this into 4 pieces.

Wholly Guacamole
Ingredients:
•6 avocados (soft, but not mushy)
•1 medium tomato, diced
•2 4 minced garlic cloves
•1 lime, cut in half
•1/2 medium onion, diced
•salt
•1 diced jalapeno pepper (optional) or diced Serrano pepper (optional)
•chopped cilantro (optional)
oCut the avocados and spoon it into a mixing bowl.
oSqueeze the juice and add minced garlic one half at a time.
oMash all the ingredients of the desired consistency.
oFold in onions, tomatoes, salt, lime juice, cilantro or peppers.
oCover and refrigerate it for 30 to 45 minutes.
oAdd salt to taste.
